Buying & storage

For most baking and cooking, look for a fine-grain granulated cane sugar — it dissolves evenly and performs reliably across recipes. If the bag simply says ‘sugar’ without specifying cane or beet, it’s almost certainly refined to the same chemical purity (sucrose) as cane sugar and will behave identically in the kitchen. Buy in a bag size that you’ll use within a few months to keep quality high, and check that packaging is sealed and dry with no signs of moisture clumping or off odors.

Storage tip: Store sugar in an airtight container in a cool, dry pantry away from strong-smelling foods — it picks up odors easily. Properly stored granulated sugar has an indefinite shelf life, though quality is best within two years.

History & origin

Sugarcane was first cultivated in New Guinea around 8000 BCE, slowly spreading through Asia and into India, where early solid sugar was produced by roughly 500 BCE. Arab traders carried refining techniques westward during the medieval period, and when European colonizers encountered the crop they built an entire — and deeply exploitative — Atlantic plantation economy around it. Refined white sugar remained a luxury in Europe and colonial America through the 18th century, sold by the loaf and kept under lock and key. The rise of the sugar beet industry in the 19th century, particularly after Napoleon promoted it as an alternative to blockaded cane, dramatically increased supply and drove prices down until sugar became the affordable pantry staple it is today.

How it’s made

Cane sugar starts at the mill, where harvested stalks are crushed to extract raw juice, which is then clarified, evaporated into a thick syrup, and crystallized by controlled cooling. The resulting raw crystals are spun in centrifuges to remove molasses, then further refined — washed, filtered through activated carbon or bone char, and re-crystallized — until the pure white granules familiar in every grocery store are achieved. Beet sugar follows a similar extraction and crystallization process from sliced sugar beets, without the bone-char refining step, making it a common choice for those seeking a vegan-certified product. Both sources produce chemically identical sucrose.
